Rotisserie Chicken Pot Pie
A easy and simple to make chicken pot pie, so easy because it starts with a store bought cooked chicken and soup base.

  1. Wash, peel and cut up the potatoes and carrots into little cubes.
  2. Place in a large pot, with the peas, diced onion and 1 1/2 cups of water.
  3. Place on medium heat until the water boils, then turn to low and cook until the potatoes are soft.
  4. While the potatoes are cooking, cut up the rotisserie chicken.
  5. Preheat the oven to 400F
  6. Line a large pie plate with either homemade pie crust or purchased pie crust.
  7. Do not strain the vegetables,  add the cream of chicken soup, and the gravy mix.
  8. Stir until the gravy mix is blended in, add the chicken and poultry seasoning. Stir together well.
  9. Pour the  mixture into the pie crust.  Layer with the second crust and seal the edges.
  10. Bake at 400 until golden brown.
