Fall – Time for Caramel Cookies
Fall flavours are amazing, it really is harvest season. Grains and baking take up a bigger part of my fall meals planning. The scent of baked cookies from a warm oven become a welcome addition to the home atmosphere. Spices, apples, fresh nuts, caramel and maple are all reappearing in our menus.
I was craving caramel but didn’t want anything too sweet. The oatmeal and nuts in this recipe cut down on the sugary sweetness of the caramel.
To make this recipe you will need:[wc_row][wc_column size=”one-half” position=”first”]
½ cup butter
½ cup white sugar
½ cup brown sugar
1 tsp vanilla
1 cup flour[/wc_column][wc_column size=”one-half” position=”last”]
½ tsp baking soda
½ tasp baking powder
½ tsp salt
1 cup oatmeal
1 ½ cups assorted nuts Mixed unsalted nuts, peanuts, pecans,
12 caramels cut into little bits[/wc_column][/wc_row]
Mix in order given. Blend butter, sugars, vanilla and egg. In same bowl add flour, baking soda, baking powder and salt. Mix well. Add oatmeal, nuts and caramel.
Scoop onto a parchment lined cookie sheet. Bake at 375 for about 10 minutes.
Heavenly dunked into a latte.
