Celebrate Fall with Pumpkin Arrangements and Apple Cream Tarts

Fall is such a wonderful time of year, time for cooler days, fun decor, fall spices and of course pumpkins and apples.  There are so many wonderful ways to celebrate fall, candlelight, football, lattes, hot coffee, walks in the leaves and of course enjoying the harvest and the smell of baking again.

To celebrate Fall I am sharing a very easy pumpkin decor arrangement and delicious fresh Apple Cream Tarts.  Lets start with the no dishes to wash faux pumpkins.

Faux pumpkins are so easy to use and collect.  The difference between how they look from one year to the next is in how you display them.  They can stand alone or in groups, in a basket, a bowl, a lantern or as in this arrangement a cake stand or two.

Fall Pumpkin Arrangements

To give these pumpkins some flare, I placed them on an all white tablecloth,  took out the white cake  stand, added some greenery and then placed the pumpkins on top.

The larger and taller of the cake stands is layered with large leaf faux greenery in a soft pale green.  The greenery was laid out in a symmetrical pattern covering the entire circle and hanging over the edge of the cake stand by approximately two inches.

The smaller white pumpkin was done the same way, but with smaller leaves.

Once you have the pumpkins in place,  you may want to arrange some of the leaves by pulling them outwards a little bit, or adding in some more leaves.

It’s a simple as that, my leaves are faux as this arrangement will be out for awhile.   Live greenery also works but the shelf life is limited to a week or so.

Apple Tarts with Cream

In Canada I don’t celebrate the cooler days,  I find it foreboding of the cold of Winter.  I do enjoy using the oven again, especially with the fresh fruits of late summer.   Like most families we love the start of pumpkin, fall spices and apple season.

These tarts are made with fresh apples and are not tiny tart size.  These apple tarts are made using a cupcake pan, so they are more substantial, like a small piece of pie.

For 1 dozen apple tarts you will need:

1 recipe of pie crust (crust recipe below)

4-6  apples ( I prefer Granny Smith or Macintosh)

1/2 cup sugar plus 2 tbsp

2 tbsp flour

1/2 cup whipping cream

1 tsp cinnamon

Pie Crust

Make or purchase your tart shells.  The pie crust recipes  are included at the bottom of the post.

Make the tarts using a cupcake pan.  Roll your dough to 1/4 inch thickness and cut into tart rounds.  A large mouth mason jar lid is the perfect size for this purpose.   Your pie crust can be made ahead, placed in the cupcake tin and then wrapped in saran wrap and frozen until ready to use, or chilled overnight.

Apple Tart Filling with Cream

Peel and slice your apples into a medium size bowl.  Sprinkle with 2 tbsp sugar and 1 tsp cinnamon. Stir to coat the apples.

Fill your lined tart tins with the apples.  Make sure your tarts are  full of apple, you may find that your apple slices are a big large, if so just cut them so they fit.

In a small bowl add 1/2 cup  sugar and 2 tbsp of flour.  Mix together and then slowly add the cream.  Once blended spoon the cream mixture over top of the apples.  I use a teaspoon to ensure every tart gets some cream.

Apple Tart Streusel Topping

This crumb topping is what I use for pies, muffins, coffee cakes.  This recipe is good for anything you want to have a crunchy crumbly top.  The flour takes away the excess sweetness of the brown sugar.

To make the streusel topping you will need:

1/2 cup cold butter

3/4 cup flour

1/2 cup brown sugar

1 tsp cinnamon

Mix flour, sugar and cinnamon together.  Cut in cold butter until crumbly.  Sprinkle on top of each apple tart, making sure the apples are covered.

Bake at 400 for ten minutes, lower to 375 and bake 20 minutes more.  Watch the tarts closely and take them out as soon as they turn golden.

You can place a dollop of whipping cream on top if you like, but its optional, they are delicious either way.

I hope you are able to see all the layers in this tart and how flaky the crust is.   Butter is too oily and binds with the flour too much I love the sweet taste of butter but with the filling you don’t need the extra sweetness.

Super Simple Small Batch Pie Crust Recipe

2 cups flour

1 tsp salt

 

2/3 cup lard (never butter or shortening)

About 5 tbsp very cold water

This is the simplest recipe I know of.  My Mom taught me to make this for my play set baking pans.  It will make enough for a dozen tarts.  This recipe is very good, it was the recipe I learned with.

Mix flour and salt together distributing the salt well.  Add the lard.  Break up the lard into little bits, then mix into with the flour until its pea sized.

Add 3 tbsp of the cold water and try and incorporate the dough.  Add more water if you need to.

Roll out to 1/4 inch thickness, cut and insert in your tart tin.

This  more elaborate pie crust recipe makes enough for 3 pies and you can freeze the extra.

    1. You know how apple pies can get wet because of the apples. The cream seems to absorb that without changing the texture. I hope that makes sense. Let me know how you like the tarts
