I first saw this on a TV show while visiting at my sons.  I don’t know what show it was on to give them credit for the idea, but this soup recipe is my own.  My son laughed when he saw the show, but enjoys eating this soup.

If there is a potluck or some sort of casual gathering this recipe is always a hit. Today chicken soup was on the menu and Herman specifically requested this soup instead. It’s simple, fast, inexpensive and I think kind of fun.

To make the soup you add the ingredients that come in a  cheeseburger, hold the relish and mustard.  I don’t measure when I make this I just toss the ingredients in a pot.  Don’t worry too much about  measuring anything.

Cheeseburger Soup Recipe

1 lb hamburger

large onion

4 cups beef broth

2 large fresh tomatoes

1/2 head lettuce

2 tbsp butter

2 tbsp flour

1 cup grated cheddar

2 cups milk

In a large soup pot brown the  hamburger.

Dice a large onion, add to hamburger. Continue cooking until the onions are translucent.
Add beef broth, bring to a simmer.

Add 2 large FRESH tomotoes, diced into small chunks.

Half an hour before serving, shred half a head of lettuce and cut into about 1 inch lengths, add to soup.

To make this soup less hearty half the amount of cheese sauce,  double the amount of broth, tomatoes and lettuce.

Cheese Sauce

In a medium sized  pan over med low heat, melt 2 tbsp of butter, blend in  2 tbsp of flour, add 2 cups of milk. heat and stir until thickened.  Depending on the heat this will take about five min.

Add 1 cup of cheddar cheese, cook until just melted and then pour into the soup.  Stir to incorporate.

Salt and pepper to taste.  Then serve.

Hint: The cheese brand you choose can greatly vary the saltiness of the soup, I never add any salt until the very end.

Optional Baking

Baking it only takes about five minutes.  It makes it a little prettier for serving.

Ladle soup into individual tureens and cover with a slice of buttered french bread. Place in oven on broil and cook until top is golden.

Take out of oven, let sit a couple of minutes and then serve.

This soup really hits the spot in the fall and it freezes very well.
