Canadian Bacon Spinach and Goat Cheese Tarts

Savoury Tarts Fit for Company

These rich delicious tarts or quiches are good enough for company.  One small tart per person and serve it something light like salad of fruit.  Its rich but doesn’t taste fatty because of the lean Canadian bacon.  You can easily substitute the bacon for ham, but I much prefer it with the bacon.

My eldest son ate most vegetables including spinach until he heard his uncle say spinach was disgusting, blah blah blah.

As his Uncle’s opinion was very important to him, he never ate spinach again while growing out.  At least not openly he didn’t,

I was able to sneak spinach into quiches, pizza (my favorite topping) and lasagna without him noticing the spinach.  I will admit sometimes I called it bok choy, or beet greens, or kale.  Whatever works is my motto, my sons ate spinach quite regularly.

You will need:

Tart tin lined with pie crust home made or purchased

1 tsp olive oil

5 slices of Canadian back bacon, diced

2 cups fresh spinach, cut

1/4 cup very finely diced red onion

1/2 cup goat cheese

1 cup half/half cream

2 eggs

In large frying pan add olive oil, cook bacon.  Add chopped spinach and diced onion,  cook until spinach is wilted.   Drain in colander.  Place in pie crust lined tart pan.

Crumble goat cheese over spinach mixture.  Add salt and pepper to taste.

Beat eggs and cream, pour over spinach.  Bake about 30 minutes, until golden and puffy. Remove from oven, set aside for 10 minutes and eat right away.
