Popsicles for Adults and Little People

I haven’t had a popsicle since the 70’s.  Not until this week.  This summer I saw several postings about popsicles and thought this looks both fun and easy to do.

Herman of course was all for it, he is one of those warm blooded people always too hot.   He loves summer and being outside, he will be asking for these.

I went searching for a popsicle maker, I wanted one shaped like a fudgesicle.  I found a old Tupperware one like I had in the 70’s, right shape, wrong price.

I scooped one up at the dollar store that wasn’t a fudgesicle shape but would be big enough for little people.

I made three different popsicles,  two boozy ones and one for little people.  I will start with the  alcohol free recipe.

 

 

Pineapple Coconut Popsicles

1 can pineapple

1 cup coconut milk

1/2 cup coconut

1/4 tsp coconut extract

Place everything in a blender, mix on high. Pour into a popsicle maker and freeze until solid.

Greyhound Popsicles  with Gin

1 whole grapefruit, peeled

1 cup grapefruit juice

2 oz gin

1 tbsp sugar

1 fresh grapefruit, peeled

Place everything in a blender and mix.  Pour into popsicle maker, freeze until solid.

Pomtini Popsicles

I took the Oprah Winfrey Martini recipe and fiddled with it slightly to come up with this popsicle.  Adding the Cointreau liqueur is truly worth it.

1 oz  Vodka

1 oz  Cointreau

1 1/2  cup Pom juice

2 tbsp fresh lemon juice

1/4 cup sugar

1/2 cup water

Place everything in blender and mix.  Pour into popsicle maker and freeze until solid.

 

 

 

 

 

 

When Herman is home I will show him the new popsicle maker and make some Corona with Lime slices popsicles.  They actually soundvery  unappealing to me because believe it or not I loathe beer.

To make a Corona Beer popsicles all you need to do is add a slice of lime into the popsicle maker and add the beer.  Maybe it will be a new Herman favorite.  I can’t recommend it, because never ever will I try one.

Thinking warm thoughts, you just gotta love summer.

  1. I’m definitely going to make these for the grandkids! If I feel like a quiet night I might give them a grown up one…haha
